MAKE | Frozen Pumpkin Spice Cocoa


Have any of you been to Seredipity 3 in New York City? They have something there called "Frozen Hot Chocolate" and yes, it's exactly as amazing as it sounds. With the fall season upon us and the holidays coming up quick I'm in the spirit to add spice to EVERYTHING! (PUMKIN ALL THE THINGS!) Remember I made pumpkin chili the other day. I can't help it! Are you doing the same thing too?

The other day I tried my hand at my own version of frozen hot cocoa but I pumpkin spiced it! Except instead of being loaded with artificial flavors and preservatives and sugar and fat, mine is full of nutrients and superfoods. You're welcome. ;) Oh my gosh you guys! It's so good. I knew I would have to share the recipe with you! Try it and let me know how you like it!

INGREDIENTS:
➳ 1 packet (or scoop) Vegan Chocolate Shakeology
➳ 1/4 c. organic pumpkin puree (NOT pumpkin pie filling)
➳ a few good shakes of Pumpkin Pie Spice
➳ 1 c. vanilla almond milk
➳ 1/2 c. water
➳ 1/2 banana
➳ 9 ice cubes

METHOD
Combine everything in a high power blender till smooth and creamy! Add more ice if you want it thicker (or omit the water) Enjoy right away before it melts!

MAKE | Autumnal Paleo Pumpkin Chili

PALEOPUMPKINCHILI1 paleopumpkinchili2 For me fall conjures up all kinds of nostalgia. As soon as the air gets crisper I seem to get perkier. I love the spice and the season and the start to a lineup of holidays that make me more happy than I'm sure is a normal reaction. Getting to wear long sleeves and leather boots and sip on things that steam while you sit outside with friends in the crisp air! I adore it. And even though the heat index here in Florida is still breaking 100 every day (WTF Florida? It's September.) I'm bringing fall inside with spicy candles and recipes like this chili. I found the original recipe online and then tweaked it to make it paleo and to add some warmth in with lots of yummy spices.

INGREDIENTS
➳ 1.5 lbs. grass fed ground beef (the best quality you can find)
➳ 1 medium yellow onion, diced
➳ 1/2 green bell pepper, chopped
➳ 3 cloves of garlic, freshly minced
➳ 14.5 oz. can organic Muir fire roasted diced tomatoes
➳ 1 15 oz. can organic pumpkin puree (start with 1/2 can and add more for taste/texture)
➳ 1 8 oz. can tomato paste
➳ organic chicken broth
➳ 3 Tbs chili powder
➳ 1 Tbs cumin
➳ 1 Tbs black pepper
2 Tbs garam marsala
➳ 1 tsp cinnamon
➳ 1/2 tsp cayenne pepper (or more if you like it hot!)
➳ salt to taste

METHOD
1. Brown the ground beef over medium heat. Add a little salt and pepper. 
2. Ddd the onion and bell pepper and cook till tender
3. In a separate large pot add the diced tomatoes, pumpkin puree, tomato paste and chicken broth (using the empty tomato can to fill twice with chicken broth and add that in as well. If you like your chili thicker, use less broth. If you like it more soupy, use more. It's up to you!) Mix everything up over low heat till it is warm. 
4. Remove the liquid from the pot and put it into a blender. Pulse a few times till the tomatoes and pumkin turn into a thick and velvetty texture. Pour the mixture back in the pot. 
5. Raise the heat to medium high and add in the browned beef and veggies from the other pan. Season with all the spices and tweak to your own tastes! Bring it up to a rolling simmer and then turn down the heat to a low simmer and let it go for about 15 minutes to let all the flavors meld and the chili thicken up!
6. To stay paleo, serve it and enjoy it as is. If you aren't paleo or your family members aren't they can dish this up over rice with cheese and sour cream.

I would have never in a million years thought my life right now would look like this! Coaching has not just helped me to lose weight, pay off our debt, meet an incredible community, find purpose, and earn an income... it has also helped me to find a new passion: the fit lifestyle. Getting outside, moving my body, eating things that fuel those explorations.... it's all possible because of the changes that being a part of challenge groups and working as a coach has brought.

A year ago I would have thought that this future, in these images, was impossible for me. I would have told you that you were crazy to say I'd be hauling an 11 foot paddleboard all over the state and doing headstands on it! I would have told you that you were straight up insane if you had told me that I'd yearn to move my body like this, to feel my muscles be strong, to feel the sun on skin I thought I'd always have to hide. Maybe you feel the same. Maybe you're stuck in dogma. Thinking that your career has to look a certain way. That you have to work 9-5 and hate it to have a "career". That network marketing is a joke. That you couldn't possibly be an inspiration to someone else. It might be time to let go of the noise around you telling you this won't work, that you can't do it, that it's too hard or that I'm an exception... and listen to your own inner voice! My Review
The 21 Day Fix changed the game for me! Up until this point I was on my own trying to figure out what to eat, how much to eat, and how to stay balanced between my food groups. I was confused as to if I should be counting calories, fat, carbs, or other macros to best get the results I wanted (leaning out, more energy, burning fat) and I was at a plateau.

The 21 Day Fix TAUGHT ME HOW TO EAT! It took a week or so for me to get used to the containers and to figure out meals that I liked that worked with how many of each color I was supposed to eat each day but once I got used to it, it was almost magical how easy my nutrition became! I didn't have to count macros or track all my foods, if it fit in the container, I could eat it!

When I decided to go paleo I used the 21 Day Fix to keep me on track. It was the easiest transition I've ever had when making a big nutritional change like that! I was able to lose 15 pounds in just 21 days and was able to learn how to eat a paleo meal plan that included all my food groups: veggies, fruits, healthy fats, carbs, protein, and nuts/seeds/oils.

The workouts are structured in a way that they go by so fast! I love the mix of cardio and strength as well as the flexibility workouts (pilates and yoga) thrown in to keep you from getting bored during the week and to give your muscle groups a rest.

This is my GO-TO recommendation for people of all kinds of fitness and goal levels because the program adapts to each person so perfectly! It's amazing for busy people too because it takes all the guesswork out of meal prep and the workouts are so short!
