Pinterest Win! Paleo Cauliflower Fried Rice


I don't know about you but I love that website Pinterest Fails. Don't you? If you don't know what it is, basically it's a website where normal people can upload their hilariously failed attempts at things they saw on Pinterest. It's hilarious! And oh-so-relatable if you've ever tried to re-create something you found on Pinterest that seemed simple and then you realized that it was probably created by a chef and a team of Martha Stewart pros. Here's two that made me chuckle...

So when I first heard about "Cauliflower Rice" on Pinterest, I imagine myself gagging on mushy veggies under the pretense that they'd taste like risotto. I'm into health and nutrition. I eat kale chips and freeze dried mango and I make pancakes out of almond flour and I swear they are just as good as the real kind, but I'm still only human. And sometimes healthy things are just gross. That's what I expected from using chopped up cauliflower as rice.

I saw a recipe online for Cauliflower Fried Rice and I decided to give it a go myself. And OHMYGOSHYOUGUYS it's one of my favorite Pinterest Wins ever! (The Easter Egg coconut next cupcakes might be reining champs followed closely by banana ice cream because... obviously.)

It's super easy. And I made a few tweaks so it's gluten free and (pretty much) paleo. For example, I used Bragg's Liquid Aminos and Tamari in place of soy sauce. But really, you shouldn't fear this recipe, it isn't full of weird ingredients that your husband will give you the stink eye over. I promise!

INGREDIENTS: 
➳  1 heaping cup Cauliflower (processed in a food processor till rice texture.)
➳  1 organic, free range, antibiotic free chicken breast (could I be anymore Portlandia right now?)
➳  1 tbs Cold pressed Sesame Oil
➳  Tamari (to taste)
➳  Bragg's Liquid Aminos (to taste)
➳  1 small yellow onion, diced
➳  1 cup peas and carrots (I used the frozen kind, defrosted)
➳  1 egg (lightly beaten)
➳  Himalayan Sea Salt & black pepper (to taste)

METHOD: 
1. Heat the sesame oil in a medium skillet over medium heat
2. Add the diced chicken and onion, spray some Bragg's on them (1 or 2 sprays is good!)
3. When the chicken is mostly cooked, add the peas and carrots and a quick dash of salt
4. Once the veggies are warmed through and the chicken is fully cooked, scoot everything to one side of the pan and add the egg, scramble it till mostly cooked

5. Add in the cauliflower rice and a good measure of tamari. Maybe a sprinkle more of sesame oil if things are looking dry. Turn down the burner and let everything cook on low, stirring occasionally for about 5 minutes or until cauliflower rice is tender. Add black pepper and eat right away while it's piping hot!
