High Fat Low Carb Key Lime Cheesecake Bites

Do you have a sweet tooth like me? Or miss treats when you're trying to eat on plan? I hear ya! Recently I've been switching up my meal plan and experimenting with different things to find what works best for my body! Adding in some more fat and taking out grains and trying some high quality dairy (which I usually fully avoid) and just really being constantly trying to refine and get better at fueling my body! I encourage you to do the same!

I came across this recipe from a friend and instantly I knew I had to try it! Cheesecake is a FAVORITE dessert of mine! But it's normally got gluten and tons of sugar in it. Also, I can't not eat an entire slide when given the chance. So these little grain free, sugar-less treats that are muffin tin sized are so PERFECT for me! Plus they are full of good quality fat so they actually satiate you instead of leaving you craving more! It's crazy. After 1 I feel fully satisfied!

You could probably, pretty easily swap out the key lime for other cheesecake flavors. Just remember to avoid high sugar toppings (like jam or milk chocolate) because that will change the end result. Dark chocolate could work (especial if you make it by mixing cocoa with coconut oil!) Almond butter could be good too! Or maybe a little bit of fresh strawberries crushed up? Play around with it!

Mix 2 Tbsp salted butter (melted) and 1 tablespoon coconut oil (melted) with 1 tsp Swerve, a few shakes of cinnamon and at least 1/3 cup almond meal. Keep adding until it's not runny. (I used closer to 1/2 cup) Line six baking cups and place in oven at 350 degrees for about 10 minutes. Just watch for it to brown slightly.

Squeeze 2 limes, add 8oz soft cream cheese, 1/4 cup Swerve, 1/2 tsp vanilla extract...mix it up with beaters and add to the bases in each of the 6 cups. Place in oven and cook 350 degrees for 20-25 min - just watch for the filling to rise a bit. If it's cracking it's definitely done! Place in the fridge to chill overnight then enjoy!
