MAKE // 90 Second Grain-Free Bread

I am all about kitchen magic. Simple things that are quick and still healthy are like my holy grail. And as someone who has food sensitivities, it can naturally be more tricky. I'm gluten free 100% of the time because I have Hashimotos. But beyond that I've noticed that I am able to maintain my weight and feel better when I'm also grain free.

One of my favorite meals for lunch are sandwhiches. So when I found out I had to go gluten free I was so sad. And gluten free bread is just a bit sad too. It's so expensive and so tiny that I feel like I'm eating an elf-sized sandwhich and it's just a bummer.

Enter this incredible recipe I learned from some low carb friends! It is so stinking easy and it is so very delicious that I have no desire to ever go back to regular bread or even regular gluten free bread! When I shared this recipe step by step in my Instagram story you guys flipped out! And I got tons of messages asking more about it! (If you aren't following me on instagram, you're missing out!) Today I'm going to teach you how to make 90 Second Bread at home and I think it just might change your life.

First things first, you need to gather your ingredients:
➳ 3 tbs almond flour
➳ 2 tbs butter (melted)
➳ 1/2 tsp baking powder
➳ 1 egg

In a small mixing bowl, combine all your ingredients and mix up with a spoon until they are all combined. Pro tip: let your melted butter cool down just a smidge or it will actually start to cook your egg and you'll end up with little eggy clumps which is fine really but will mess up the texture so just let the butter cool on your countertop for a minute before you add it in.

Grab a microwave safe plate (or ramekin) and spray it with olive oil or your favorite nonstick spray. (Please please please choose one that is natural. We use a stainless steel sprayer and put our own extra virgin olive oil in it so we know it's the good stuff!) Then spread your mixture evenly. If you use a plate, you'll end up with a bigger, thinner end result. If you use a smaller bowl or ramekin you're bread will be more like an english muffin.

Pop it in the microwave for 90 seconds! Now you've got three minutes to do with what you will. Maybe have a dance party. Maybe make a smoothie. Maybe relish 3 minutes of doing nothing. I have faith in you that you'll come up with something great to do here.

Use a spatula or a chef's knife to take it off the plate and cut into two pieces. If you did yours on a plate like I do, you'll end up with two half-circle shaped pieces that almost look like a pita pocket when you stack em. If you did yours in a bowl you'll cut yours in half midway through like a biscuit.

Now here's my biggest pro tip: the bread is ready to eat now. But if you really wanna level up, pop it in the toaster for a minute or two. I don't know what sort of buttery black magic happens when you do this, but it crisps up the bread a smidge and the butter flavor really comes out. It's scrumptious. And it's worth waiting another minute or two for!

Load up your sandwich with your favorites! Mine are chipotle avocado oil mayo and turkey, ham, and cheese! Fold your sandwich meat and cheese in half and it will fit perfectly. See? I thought of everything for you! Start to finish this is about a 5-minute lunch. Grab a piece of dark chocolate because you deserve it! Enjoy!
